




1 3/4 cups all-purpose flour
1/4 cup bran or wheat germ
3/4 cup brown sugar
1 1/2 cups (optional) chopped up ‘dry’ treats: dates, raisins, apricots, coconut, prunes, figs, dried cranberries
4 tsp cinnamon
2 tsp baking soda
1/2 tsp salt
3 eggs
2/3 cup plain yogurt
1/3 cup vegetable oil
1 tsp vanilla
3 1/2 cups (optional) grated or mashed ‘wet’ treats: grated carrots, apples, zucchini, banana, pumpkin
1/2 cup (optional) toasted & chopped walnuts, pecans, almonds
1 tsp (optional) rind of lemon, orange, lime
In a large bowl, combine flour, bran/wheat germ, sugar, optional chopped up dried fruit, cinnamon, baking soda and salt. In separate bowl, whisk together eggs, yogurt, oil and vanilla; stir in optional ‘wet’ fruit/vegetables and nuts. Pour over dry ingredients; stir together just until moistened.
Spoon into greased muffin tin. Bake in 350ºF oven for 35 minutes or until tops are firm to the touch. Makes 8 large or 12 medium muffins.
